Salmon Roulade

Ingredients

  • Salmon – fresh, boneless fillet
  • Squid tubes – cleaned and prepared
  • Bell peppers – finely diced (red, green, or yellow)
  • Onions – finely chopped
  • Garlic – minced
  • Mayonnaise – 2 tablespoons
  • Olive oil – for cooking and marinating
  • Chives – finely chopped, for garnish
  • Horseradish – 1 teaspoon (adjust to taste)
  • Pepper salsa – for marinating
  • Celery savings – thinly sliced for garnish over the salad

Method

  1. Prepare the Pepper Salsa

In a bowl, combine finely diced bell peppers, onions, minced garlic, a drizzle of olive oil, and a pinch of salt. Mix well to create a vibrant pepper salsa.

  1. Marinate the Salmon

Take the fresh salmon fillet and cut it into thin strips that can be rolled.

Coat the salmon strips with the prepared pepper salsa and let them marinate for at least 20 minutes to absorb the flavours.

  1. Prepare the Squid Tubes

Clean the squid tubes thoroughly and pat them dry. Ensure they are ready for stuffing.

  1. Stuff the Squid Tubes

Carefully roll the marinated salmon strips and stuff them into the squid tubes. Avoid overfilling to ensure they hold their shape during cooking.

  1. Cook the Roulade

Heat a pan with olive oil over medium heat.

Sear the stuffed squid tubes for 2–3 minutes per side until the squid is firm and opaque, and the salmon inside is cooked through.

  1. Prepare the Salad Garnish

Slice the celery very thinly (shavings) to use as a fresh, crisp garnish.

Plating

Place the cooked squid and salmon roulade on a serving plate.

Garnish with chives, a small dollop of horseradish mayonnaise (mix horseradish with mayonnaise), and the celery savings over a light salad of choice.

Serving Suggestion

Serve warm or at room temperature as a stunning appetiser or light main course. The combination of the pepper salsa, smoky salmon, and squid creates a delicate and flavorful dish.
